Baked Oatmeal To-Go

Makes 12 Servings
Bake at 350°F for 30 minutes
INGREDIENTS:
2 eggs, beaten
2 tbsp. canola oil
½ cup brown sugar, packed
½ cup applesauce, unsweetened
1 ½ cups milk
2 tsp. vanilla extract
1 Tbsp. cinnamon
3 cups old fashioned oats
2 tsp. baking powder
¼ cup dried cranberries
¼ cup dark chocolate chips
¼ cup walnuts, chopped
¼ cup shredded coconut
DIRECTIONS:
- Preheat the oven to 350°F. Line muffin pans with liners and set aside.
- Combine eggs, oil, brown sugar, applesauce, milk, vanilla, and cinnamon in a medium bowl. Add in the oats and baking powder. Spoon ¼ cup of batter into each muffin well.
- In a small bowl, stir together the cranberries, raisins, walnuts, and coconut. Sprinkle the mixture on top of each oatmeal “muffin” and gently press tot make the baked into the batter.
- Bake for 30 minutes. Store in an airtight container to grab-n-go later or enjoy immediately.
