Baked Oatmeal To-Go

Here is one of our favorite recipes for breakfast. 👸🏼 It’s easy, packed with nutrients, and we can take it on the go.

Makes 12 Servings

Bake at 350°F for 30 minutes

 

INGREDIENTS:

2 eggs, beaten

2 tbsp. canola oil

½ cup brown sugar, packed

½ cup applesauce, unsweetened

1 ½ cups milk

2 tsp. vanilla extract

1 Tbsp. cinnamon

3 cups old fashioned oats

2 tsp. baking powder

¼ cup dried cranberries

¼ cup dark chocolate chips

¼ cup walnuts, chopped

¼ cup shredded coconut

 

DIRECTIONS:

  1. Preheat the oven to 350°F.  Line muffin pans with liners and set aside.  
  2. Combine eggs, oil, brown sugar, applesauce, milk, vanilla, and cinnamon in a medium bowl.  Add in the oats and baking powder. Spoon ¼ cup of batter into each muffin well.  
  3. In a small bowl, stir together the cranberries, raisins, walnuts, and coconut.  Sprinkle the mixture on top of each oatmeal “muffin” and gently press tot make the baked into the batter.
  4. Bake for 30 minutes.  Store in an airtight container to grab-n-go later or enjoy immediately.
